Radicchio Salad With Orange
INGREDIENTS FOR 4 PEOPLE:
300 gr. of red radicchio
3 oranges
150 gr. of large sliced ham
DRESSING:
2 tablespoons of balsamic vinegar
half teaspoon of mustard
a pinch of sugar
a small onion
olive oil
salt and pepper duly.
METHOD:
Cut radicchio in small slices; cut the ham in small sticks, peel the oranges eliminating the white parts and cut them in small pieces. On a salad bowl emulsify the balsamic vinegar, the olive oil, the mustard, the sugar and the minced onion, add salt and pepper, radicchio slices, ham oranges, then combine all.
You may change recipe adding shrimps, cheese and other crustaceans.
Fettucine (Or Spaghetti) With Radicchio And Bacon
INGREDIENTS FOR 4 PEOPLE:
500 GR. of fetuccine
250 GR. of radicchio
150 GR. of bacon
1 small onion
A clove of garlic
2 teaspoons of balsamic vinegar (or white wine), olive oil, salt and pepper duly.
METHOD:
Boil pasta in a pan of abundant water, adding a pinch of salt.
In the meantime cut Radicchio in small slices, cube bacon, gently brown with some butter and olive oil, onion and garlic finely-minced; add bacon and when it had been browned, add Radicchio, season with salt and pepper, and let stew for some minutes. Then put on aromatic vinegar and let it dry off on a high flame for a few instants; add pasta, let it flavour and add a handful of Parmiggiano (Parmesan cheese).
Fillet Steack With Radicchio
INGREDIENTS FOR 4 PEOPLE
4 beef fillet (about 200 gr. each one)
250 gr. of radicchio
1 small onion
1 glass of white wine
1 small glass of milk cream
50 gr. of butter
Salt and pepper duly.
METHOD:
Brown the fillets in a frying-pan with the half of the butter, sprinkle them with a bit of white wine, season with salt and pepper; when the cooking will seem at a good point, take them from the frying-pan and keep them hot. Gently in the same frying-pan, heat the remaining butter and brown the onion finely minced, add the Radicchio cut in strip-shaped pieces; let it stew for some minutes, add little white wine and let it dry off on a high flame; add the fillets, the milk-cream, and amalgamate the whole for some minutes, season with salt and pepper.
Serve in a hot dish and decorate with some leaves of fresh Radicchio. You may change the recipe substituting beef fillets with white meat, veal, turkey or chicken.
